Cinnamon Orange Sweet Potatoes


As cold weather and flu season drags on, it's important to eat a balanced diet that is rich in vitamins and minerals. In particular, foods containing beta-carotene are thought to help boost your immune system and keep your mucous membranes and upper respiratory system healthy and harder to infect. As well, foods containing vitamin C have long been known for providing immune support and antioxidant protection.

Incorporate both of these important nutrients with the help of sweet potatoes and oranges in this winter comfort food recipe.

Ingredients

  • 4 lbs of sweet potatoes, whole

  • 4 tbsp coconut oil

  • Zest from 1 orange, divided

  • 1/4 c fresh orange juice

  • 1 tsp cinnamon powder

  • 2 pinches cardamom powder

  • Sea salt, to taste

  • 2 tbsp maple syrup (optional)

Instructions

  1. Pierce whole sweet potatoes with fork and bake on baking sheet at 350 degrees for 1 hour or until fork tender.

  2. Remove potatoes from oven and allow to cool for a few minutes before peeling off skin. Mash with a blender or potato masher.

  3. Add coconut oil, half of the orange zest, orange juice, spices, and maple syrup and blend until smooth.

  4. Top with remaining orange zest and an extra sprinkling of cinnamon powder to serve.
