Cooling Cucumber Noodle Salad With Orange Tahini Dressing
With our busy schedules, a lot of us do can ignore the effects food have on our body. But notice how you don’t feel like heavy, starchy foods in the summertime but you may gravitate towards more juicy, watery, fresh, crisp, raw foods. One of the reasons for this is because foods help regulate our body temperature!
We got this delicious recipe from Well Beings Nutrition /@wellbeingsnutrition. This salad is a perfect cooling treat for the Texas heat! It is hydrating, moderates the heat and fire in the heart, and helps to generate body fluids and clear toxins.
Serves 4 as a side dish
INGREDIENTS
1 small or half of a large cucumber, washed
A large pinch of toasted sesame seeds
A pinch of sea salt
2 sprigs of fresh flat-leaf parsley, chopped
12 chive stalks, finely chopped
A small handful of fresh mint, chopped
Optional: 1 teaspoon of honey
4 teaspoons of tahini
Juice and zest of 1 orange
INSTRUCTIONS
Mix the orange juice and tahini together. Add the honey (if using). Pour this dressing over the cucumber ribbons.
Scatter the mint, chives, and parsley over the top and stir well. Sprinkle with the sea salt, toasted sesame seeds and orange zest.
Now eat, enjoy and imagine your body cooling down with every bite!
