Detox Cabbage Soup
The world knows the Irish as a group of hard-working, hard-drinking people, and it's no coincidence that they're also well known for their cabbage recipes. They have been utilizing the cleansing effects of cabbage to help with hangovers for centuries.
Cabbage is known in Traditional Chinese Medicine to clear heat and lubricate the intestines. It is also rich in sulfur which helps the liver to detoxify and eliminate toxins. If you have a little too much to drink this Saint Patrick's Day, this warm and hearty cabbage soup may just be the detoxifying fix you need.
Ingredients
1 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
2 stalks celery, chopped
2 carrots, cut in circles
1 tsp dried thyme
1 tsp parsley flakes
1 tsp dried basil
1 lb green cabbage, roughly chopped
1 14 1/2-ounce can diced tomatoes
2 quarts vegetable broth
1/2 tsp paprika
1/4 tsp Cayenne pepper
1 tbsp nutritional yeast flakes
1 tsp sea salt
1 bay leaf
1/2 tsp caraway seeds
​Instructions
Heat oil in a large pot on medium high heat. Add onion and cook until soft, about 4 minutes.
Add garlic and celery. Cook for 2 minutes, stirring constantly. Stir in carrots, thyme, parsley, basil, cabbage, and tomatoes.
Cook for another 2 minutes. Add broth, bay leaf, caraway seeds, yeast flakes, paprika, cayenne pepper and salt.
Cover pot and bring to a boil. Reduce to heat to simmer for 20-30 minutes. Serve and enjoy!
